Summary
Citrus, apart from the undoubted taste values appreciated for many centuries, are also characterized by significant health-promoting properties, thanks to the natural ingredients with significant activity. All over the world, the most used part of citrus in the food industry is the fresh fruit flesh or the squeezed juice. The residue in the form of peels squeezed fruit pulp and seeds is treated as waste, but in fact it is a rich source of valuable components showing biological activity, including antioxidant, antibacterial and antifungal activity. Therefore, these substances can be used in cosmetic products. Fatty oils obtained from the seeds of citrus fruits show specific composition, properties, and applications. They are characterized by the content of original triglycerides and special proportions of their fatty acids, which is why they are used mainly in the manufacture of cosmetic products intended for the care of dry and highly sensitive skin.
