Adama Mickiewicza w Poznaniu Summary The paper discusses the main factors affecting the odour and the impact of the chemical structure on the registration of fragrance. Division of aromatic compounds was made accord-ing to their origin and by the presence of certain functional groups in the molecule. Potentially allergenic fragrance compounds used in cosmetic products were specified on the background of the current legal regulations. Moreover, the physicochemical characterization, properties, methods of synthesis and the mobilization of geraniol (3,7-dimethyl-2,6-dien-1-ol) was shown - one of the most popular odorants, which is also a compound capable of inducing allergic reactions.
